Title: Prawns with Ricotta Cheese

Yield: 4 Servings

125gFresh ricotta cheese (4 oz)
1/2cWater
2lgWhite onions, chopped
3 Garlic cloves, chopped
3cTomatoes, chopped, very ripe
1tbTomato paste
1cWhite wine
2tbParsley, chopped, fresh
1tsDried Oregano
  Freshly ground black pepper
1kgLarge uncooked prawns, with
  Tails on, shelled & deveined

1. Dice Ricotta Cheese and lightly toast under griller. Set aside. 2. Bring water to the boil. Add onions and garlic. Reduce heat and simmer for 3-4 minutes. 3. Add tomatoes tomato paste, white wine, parsley, oregano and pepper. Cover and simmer for 30 minutes. 4. Add prawns and cook for 12 minutes until tender. Top with ricotta cheese cubes and garnish with extra chopped parsley.

Serves 4-6
